Juicy Butt BBQ Chicken Wings

Ingredients:

Wings - We use JUMBO chicken wings for this recipe. None of these tiny little rat sized peglegs.

Rub:

1 part Cayenne

1 part Black Pepper

2 parts Paprika

1 part Mustard Powder

Prefer Cherry Wood to smoke or grill with.

Make the rub a day ahead.

Dump the wings into a non-reactive tub and sprinkle on a good dose of rub. Mix up real well to coat and let sit refrigerated overnight.

Next day, fire up the smoker to 230degrees and lay in the wings, tip up.(or cut the tip off)

Cook for 2hrs @ 230, remove, cover, let rest for 15min. Drizzle on your favorite sauce and chow down.

Mmmm good !!

WARNING: have a LARGE beverage and roll of paper towels nearby. You will need both !!
